Considering all of the functions of the dash I would say it is not doable. The ECU would probably throw a fault. The dash has the oil pressure light, check engine, tachometer, odometer all displayed. 
 

Curious as to why you would want to replace the dash, what benefit are you looking to achieve?

I run one on my KTM500 EXCF, in addition to the stock dash. They work great but DO NOT do certain functions like "Find nearest" etc. Purely a GPS and topo mapping display. You can add waypoints and stuff and it does have the streets and roads etc. loaded, you just can't do any kind of auto routing or finding gas etc. I am using a Montana 700 on my T7. Nice unit, very user friendly and leaps above the older Garmin user interface like was on my Montana 650T etc.

 

You could easily install the Voyager Pro in addition to the stock unit on a T7, you would just need to add a front wheel speed sensor or rely on GPS to calculate speed.
