Great idea mate, I’ve been trying to navigate through all the tubeless stuff just to find out what spare tubes anyone is carrying on longer trips. I want to know if it is necessary to take the 2 different sizes or will the 21 suffice in the 18 rim.  It would be nice to know if anyone has tried this successfully or failed miserably.
